While the holidays were fun and filled with lots of great food, I was more than ready to get back on track with my eating and work outs when we got back to NC. The Saturday after we returned, I went on a trail run at Umstead State Park. About a mile into the trail we were on, the bridge was broken so you had to continue down until you reached some rocks to use as stepping stones to cross.I’ve crossed at this location several times before without incident. Well, somebody decided to cut me off while I was right in the middle and caused me to fall into the water. I almost went completely down but luckily, only my left foot got soaked. Thanks a lot, Margaret. We covered four miles in fifty minutes which wasn’t setting any speed records but I was pretty happy with it. This was just a fun run without any time goals and I didn’t stop the Garmin for dog potty breaks or sniffs. I hadn’t been trail running in awhile and it was good to get out there! The hills on the trail are no joke and it is hard running. I’d say only 10% of the trail is flat, the rest is up, down, up, down. It is a great workout! I fueled up with a glass of chocolate milk when I went home, it is the perfect recovery beverage!We made a lot of healthy dishes in the past week:
Cuban style black beans. I ate these for at least five different meals. Not the most photogenic food but it is delicious and healthy!Avocado, mozzarella and bruschetta chicken. This was a new recipe we tried and really enjoyed it.This is another new dish we tried. I tore it out of a magazine from my parents house titled “tomato, greens, and chickpea skillet”. It was vegetarian and I really liked it. The husband didn’t think he’d like it, but he enjoyed it as well!We’ve been eating a lot of oatmeal the past week and it’s been perfect on these colder days. This batch had maple sugar and blueberries added to it.It felt good to get back to our usual healthy eating habits this past week. We had to balance off all that healthy eating with a night of fun in Carrboro where I was introduced to a black currant vodka gimlet. It was amazing!How did you bounce back from the holidays?
