Turkey Burgers with Cranberry-Apple Relish

This week we tried a new recipe from the Cooking Light magazine: Turkey Burgers with Cranberry-Apple Relish. The relish part may sound strange, but trust me, it makes these burgers! Ingredients:

  • 1/2 cup fresh cranberries
  • 1/2 cup coarsely chopped apple
  • 1 teaspoon grated orange rind
  • 2 tablespoons fresh orange juice
  • 2 teaspoons sugar
  • 3/8 teaspoon salt, divided
  • 2 teaspoons olive oil
  • 1/2 cup finely chopped onion
  • 1/4 cup plain breadcrumbs
  • 1/4 cup chopped fresh flat-leaf parsley
  • 1 tablespoon chopped fresh sage
  • 1/4 teaspoon freshly ground black pepper
  • 1 pound ground turkey

First up, I made the relish (cranberries, apple, orange rind and juice, and sugar):

032034I mixed the rest of the ingredients in a bowl, formed the meat mixture into four patties, and placed them on the grill pan.

036The finished product was juicy, flavorful, and received rave reviews from the husband. This is a definite make again dish.037We also celebrated Margaret’s second birthday! I made her a puppy “ice cream” cake. It is very easy to make. I mixed 2 parts plain greek yogurt with 1 part natural peanut butter and froze in a silicone muffin container. Then I popped it out and presented Margaret with her cake. She approved :)030Does anyone else celebrate their dog’s birthday? If so, what do you do?
